SCHIACCIATINE WITH FRESH RICOTTA AND SALMON

Michela Altieri suggests something fresh: Flatbreads with ricotta, smoked salmon, radish, cucumber.

Ingredients for 4 people:

  • Ricotta 100 g
  • Smoked salmon 50 g
  • Radishes 4
  • Cucumber 1
  • Salt to taste
  • Oil to taste
  • Pepper to taste
  • Lemon 1
  • Mint 1 sprig

 

PROCEDURE:

Wash and gently dry the mint leaves, then chop them and mix them with the ricotta, stirring gently. Wash the radishes and slice them thinly; if you have a mandoline, it will be easier! Marinate the radishes with a drizzle of extra virgin olive oil, some lemon juice, salt, and pepper. Peel the cucumber and cut it into cubes of about 3 mm (this cut is technically called brunoise). At this point, julienne the smoked salmon. When everything is ready, proceed with plating: spread a spoonful of flavored ricotta on the flatbread, place some curls of salmon on the ricotta, a couple of slices of marinated radish, and the cucumber brunoise. Garnish with a mint leaf and a drizzle of extra virgin olive oil. Enjoy your meal!
