The recipes of Michela Altieri: let's taste these fantastic Flatbreads with scrambled eggs, cacio cheese, pink peppercorns, smoked salmon, and chives.
Ingredients for 4 people:
Grate some semi-aged cacio cheese and add some ground pink peppercorns. Cut the smoked salmon into julienne strips and the chives into small rings. Now, prepare the scrambled eggs. How is it done? Crack the eggs into a bowl, add salt, pepper, and milk, and lightly beat them with a fork. Pour them into a hot non-stick pan and stir with a wooden spoon. When they start to set, turn off the heat, add the cacio cheese and pepper, and continue to stir. The residual heat of the pan will be enough to finish cooking and melt the cheese. The result should be a soft, slightly lumpy, and stringy cream. Proceed by placing the hot scrambled eggs on the flatbread, followed by the smoked salmon and chives. Garnish with a drizzle of extra virgin olive oil and a sprinkle of pink peppercorns. Enjoy your meal!
