To make this recipe, you can use either Tozzetti or Biscuits.
Ingredients for 4 people:
First, toast the pumpkin seeds in a non-stick pan and set aside. Proceed with the preparation of the lemon mayonnaise. Pour one yolk and one whole egg into the mixer cup. Add salt, pepper, seed oil, lemon zest, and some lemon juice. Blend at maximum speed until you achieve the desired consistency. In a bowl, season the lamb's lettuce with salt and oil, add the toasted pumpkin seeds, and some broken anchovies. Dip the Tozzetti for a few seconds in room temperature water and add them to the lamb's lettuce. They can be left whole or broken with your hands, to taste! Plate and garnish with the lemon mayonnaise. Enjoy your meal!
